T hrough our Pâtisserie and Dessert making course, participants will learn to prepare a range of Pâtisserie from classical to contemporary.
Under the guidance of our resident Chef and MasterChef of Great Britain, Simon Lilley, you will be working with Sweet Pastry, Choux Pastry and Crème Pâtissière and there will also be a short session on understanding sugar to be used in glazes and spun sugar finishes.
You will produce a selection from some fine French Pâtisserie, including Glazed Fruit Tartlets, Filled Choux Buns and Eclairs, traditional Tarte aux Pommes and Mille-Feuille of Raspberries and Chocolates.
