The most modern way of entertaining guests is serving a selection of canapes, finger or tray food. This experience teaches you the fundamental skills in combining, shape, texture flavour and seasonality.
By the end of this experience, you will have the skills to produce some of Coghlans classic canapes including Duck confit & mango wrap, filo pastry cones with horseradish parfait & julienne of beef, prawn cocktail mousse. You will learn the techniques of cutting bread & croutes to use as bases for mousse styled canapes, along with garnishes & lightly pickled vegetables.
