This special day course reflects the rich variety of flavours and textures associated with Tuscany, one of Britain’s favourite destinations for travel.
You will begin by making Tuscan breads, some of which will then feature in your finished dishes.
Bread is an integral part of the Tuscan lifestyle particularly for the delicious peasant foods that we so love for their simple effective flavours. You will make two styles of Tuscan breads and some simple infused oils to serve with them.
Your main dish of the day is going to feature fish. Cacuccio is the world famous fish stew featuring five different styles of fish in a rich simple stew with breads and onions, shallots and lots of olive oil. The result is a harmonious rewarding dish that would be admired at the finest dinner tables in the world.
You will also make a deliciously tasty Crostini with Chicken livers and herbs, typical of the Tuscan way of life.
Tuscany is about simple ingredients used well to give excellence of flavour and texture. Your final dish will be a Zucotto produced in a classical method to round off your wonderful Tuscan experience
