Patisserie Class

In this course, participants will learn to prepare a range of Patisserie from classical to contemporary. You will be working with sweet pastry, choux pastry, creme patisserie and there will also be a short session on understanding sugar to be used in glazes and spun sugar finishes. You will produce a selection from some fine French Pattiserie including glazed fruit tartlets, filled choux buns and eclairs, traditional tartes aux pommes and mille feuille of Raspberries and Chocolates.
