Gourmet Dinner Party

Book this course if you do a lot of entertaining or would like to do more... you will leave wanting to invite all your friends around for dinner. the course will include a session on how to plate dishes to maximise presentation skills. It will also include a selection of garnishes for plate presentation like vegetable straws, game chips and plating skills

Seasonal Variety will alter the dishes and students will be expected to have good basic skills and some experience of cooking precise dishes:

* selection of flavoured dinner rolls
* fresh & smoked salmon terrine
* fillet of pork stuffed with a wild mushroom mousse served with a herb red wine jus,
* white chocolate casket filled with dark chocolate and strawberry mousse with a fresh berry coulis and fruit leather
